I hear all the time that rooting is amazing, but what can it make my phone do? I know it's granting your phone root access. What does it allow your phone to do?

The question should be more phrased what does it allow you to do to your phone? The answer is much more. Many apps need root access to even run on any given device, some apps have options that open up when root access is discovered, it allows you to flash custom recoveries, and flash ROMs.
However, I am under the belief that there are many people who root just because of conformity. Rooting voids OS warranties, so if you choose to do it, be advised of that fact.
Is it irreversible (like a jailbreak(iOS))? And other than ROM's, what would it be useful for?
