What happens to all installed apps when N7 dies off?

So, my N7 has had some trouble, like suddenly it won't turn on. I found a thread discussing this, and had the "almost wouldn't start" episode again today, but I managed to get it on. So, I wonder, when the day comes it won't come on at all, what happens to all my paid apps and data I have on there? Can I reload them onto a replacement N7, is this stuff all in Google's cloud for me somewhere? I don't want to buy again and reload all these apps, I have some pretty specific aviation ones with subscriptions and other hard to come by data. I found some thread about backing stuff up, but I couldn't figure out how to make it useable. Ideas out there?

Yes, you will be able to reload them on a replacement N7. :) As for specific app data, you might want to use something like Helium, Titanium Backup, or MyBackup Pro. They are paid apps, but as far as I know are the only way to easily get a backup from one device to the next.
 
"app Backup and Restore" is good to have too. You still can't 'select all' but it creates a directory of the apps you can move elsewhere to save for rebuilding a device latter. Saves a lot of work.
 
There is an option under Backup and Reset under the default settings app that works well. It backs up all of the installed apps onto a certain Google account. It does not back up their data.
I recommend installing the android sdk onto your computer. Using the adb backup command you can back up all of your apps and data, which takes a long time. Or, you can use it too back up certain apps. Like games.
Under the android sdk directory there is a folder called platform-tools. On windows, you can hold shift and right click to open an expanded menu. There should be an option callsd "Open Terminal Here" or something to that idea. To back up a certain app it would be adb backup -apk "package name(s)" -f /directory/where/backup/is.ab
For example adb -apk com.fingersoft.hillclimb -f /Nexus7/backups/20130617.ab
I used that today to back up hill climb racing to the folder C://Nexus7/backups and I called it 20130617.ab

To restore, under the platform-tools directory.
adb restore "path to backup"
adb restore C://Nexus7/backups/20130617.ab
