In terms of Exposure, Constrast, Sharpness and Saturation ? I prefer point-and-shoot :D
I still set them default, since I take most of the pictures with HDR on
And btw, how to keep the HDR always on, because whenever I close the camera apps it switch back to normal mode.

To be honest with you, I find "Automatic" to be the best setting for any situation. I am not experienced with photography and I always use Auto, however my friends take much better photos using their devices because they already have professional cameras and know how to play in the settings. Besides Auto, there is no one setting that will work well for every situation. And ugh, HDR makes everything look weird to me.

I rock auto on every camera I own! Lol my one takes awesome pictures!

I keep it at sharpness - 1 with the occasional - 1 on exposure for very bright scenes. Those seem to work well for me. Sorry to tell you but the camera reverts back to normal once you leave it so if you are taking a lot of pictures in a given time just power off from the camera app. This keeps the camera ready to go even if you have pass code protection.

I understand, but you should try HDR sometimes, it makes the photos more vivid in most of the cases

I have the habit to close the app and use screen lock rather than press the power button to lock the device, a bit inconvenient

The one thing I have noticed about the camera is the auto focus can be a little "fussy" and it sometimes seems to "hunt"for its focus point. I think this is the source of some of the camera quality complaints. To addess this, I leave the shutter options set on "touch to capture". This way you simply touch the screen where you want the camera to focus, and the camera focuses there and then the shutter releases.

yeah great tip, photo is much more sharp and detail, but the downside is the time to take a picture has increase dramatically
