where can user manuals be found for the various apps provided with the S6?

of particular interest right now is the Verizon email app. I'd like to find a way to prevent email from certain domains from being accepted by my s6 but leaving the emails on the server until downloaded to my laptop.

On Verizon's website. Just get the user manual for your phone and it covers all the apps that are installed on it. You can find it here:

If you scroll down a bit you'll find Apps & Widgets, select that and you'll find the Verizon apps described in more detail.
