Where is App Info / Clear App Data-Cache

I'm in transition from Samsung Galaxy S3 (Android 4.4.2 Build xxxUCUFNJ1) to Samsung Galaxy S6 Edge (Android 5.0.2 Build xxxDVU1AOD1).

I can't find a way to get to these options as pictured above.

Does anyone know how these things changed?

P.S. Also, why is this (International, Unlocked) phone not using Android 5.1?

It may be different on other launchers but with nova I press and hold on the app icon and slide it up to app info
