Why are my Verizon updates on my Samsung Galaxy S5 without warning all of my files are gone?

Verizon Updates my Samsung Galaxy S5 without warning and all my files are gone!

Yesterday my phone froze and rebooted on it's own. When it started back up it was stuck on the red Verizon start screen for about 5 minutes. I pulled the battery and plugged it back in and thats when I saw it was "Updating 1 of 48 applications". When my phone turned back on it was like I was turning it on for the first time. It told me my SIM was already activated and started showing the how to tutorials. I added in my gmail and restored my applications but it installed all my apps I've ever downloaded. I had to sit there and uninstall about 30 applications. All my files on the device are gone. Photos, memos, logs from applications. The text messages were gone but I was given an option to recover from the last 90 days. What on earth happened?! I called Verizon and they gave me excuses and blamed it on my for 45 minutes. Then tried to tell me to call Samsung about it. I have work files and photos that are not replaceable! I backup my files every few weeks but there I shouldn't have to fear ever waking moment that my files will be wiped out. The forced the update upon my phone and it resulted in my losing work files and photos. Every update I've ever gotten before had given me the OPTION to decline or accept. Is there anything I can do? The weird part is apps that have its own private cloud don't seem to have my files on there when I reinstall the app and login.
