Why do apps want access to "all" the information on my S3?

They want access to my accounts, storage, phone calls, social information, camera, system tools. Why would I give up this level of control and privacy to an app.?

Depends on the app. An email app would need access to contacts obviously, accounts obviously, camera and storage because you can snap a picture directly from the email app, or attach a file to it from storage, etc.

Tasker has even more permissions because it's purpose is to access system tools to automate stuff, like automatically turning keep display on when a certain app is in the foreground, then reverting back to 15sec screen timeout after using the app automatically.

Then some apps don't need permissions at all.

So what app is it, and does it's function needs those permissions?

FYI, any app that exists on both Android and iOS has the same permissions/access to your data on both OS. The only difference is that Android tells you this, iOS does not.
