Why do my settings keep reverting back on my Samsung Galaxy S8+

If I turn my phone off, some of my settings reset themselves. For example my screen timeout keeps reverting to 0 seconds, most infuriating.
My 'safe place' for keeping phone unlocked doesn't work for 'Home' despite it still showing on the list.
