Why Do Some Apps Keep Updating Although They Are Disabled

Evernote app is disabled in Application Manager but while I updating all apps It's in the update list so It updates if I don't stop it manually.

How to stop it updates.

Note : I do updates manually. If ther are updates. I click update all and it updates.
 
Obviously I only use disable for apps that I can't uninstall. Having said that, I've never experienced a disabled app updating. For me when disabling an app I usually clear the cache, data and uninstall the updates before disabling it. It might be worth it to enable the app just so you can take those steps. Although I'm a little surprised that you can't uninstall Evernote altogether, but if you can't and haven't taken the afore mentioned steps try them and see if they work for you.

Meanwhile, I'm new to the Samsung universe so it may work differently on their devices, but is the app from the Galaxy Store or the Play Store? For me with the latter if I see the app, in a list or "My Apps" on the Play Store, it just shows as being installed but is also labeled as disabled and I've never seen a disabled app show up in my update list. As for the former, I sometimes get notifications that apps have updates but I only select apps that I use or want to update. I'm not sure how many Samsung apps I have disabled on this device but for the most part I just ignore the ones I don't want and manually update the ones I do or don't mind having at least.
 
Did Evernote come preinstalled on the phone? Disabling an app is typically only for apps that came preinstalled, not ones you installed.
 
Ok, and can you clarify which app store is auto-updating it? The Play Store or the Samsung Galaxy Apps Store?
 
That's unusual. If I disable an app and look at its Play Store page, it gives me an Enable button. If you disable Evernote and look at its Play Store page, are the buttons you see Open, Uninstall, and/or Update (when an update is available)?
 
When I go to Evernote page on PlayMusic there I see "Open" button.

It looks like I couldn't disable the app.

I go to "Application Manager - Evernote" and I see Disable click is unclickable. So neither I can disable or enable it.

Yes, that means you can't Disable it. Sorry, I thought you had successfully Disabled it before in that menu. It's up to the app developer and the manufacturer or carrier to decide which apps can be Disabled, and unfortunately Evernote isn't one of them. You could try Package Disabler Pro.
