Why does a mms message send the text separately?

That just means that it will go in two messages instead of one. For example, if you send a message with a picture and some text, they will be delivered separately. It does not mean that it will be delivered in separate threads.

Hmm. I'm on Tmobile and don't see that so I'm not sure

I have to send the picture or video first and then send the text second.

It's so carriers can charge you twice if you don't have unlimited. That's just my take.

I am on AT&T and mine does the same thing no biggie for me as long as they receive Everthing.

One thing I noticed it does put the text or caption close to the attachment. I guess I can live with it.

It's a feature of advanced messaging. Leavign that turned on will segregate text from multimedia. If you want the text and picture to go out together, open settings from your messaging app, select advanced messaging and disable it. That will allow your pictures and text to go out together.
