Why won't my S5 update after factory reset?

I had to do a factory reset today. My Galaxy S5 (SM-G900V) was set back to when I first got it in a Black Friday promotion in 2014. In "About Phone" it says it's on Android version 5.0, but all of the aesthetics and functions... just everything... is exactly how it was when I first purchased the phone brand new running KitKat. As such, my phone cannot find any available updates.

Is there any way I can fix this so my phone can actually be up to date? I can provide any other information needed.

Welcome to Android Central! That's odd--Lollipop pretty clearly changed the UI appearance when it went from KitKat to Lollipop (much to the chagrin of many).

Try using Samsung Smart Switch or Kies to update the phone's firmware.

Following the reset the aethetics and functions looks the same as when I first bought it in 2014, but in the phone information it says it is running Android version 5.0. Further, when I try to perform a software update, the updater gets stuck 'Connecting to server'. Without ever connecting, which means I cannot update my phone (nor am I actually sure exactly what version it is running). My apps appear to be able to update but do not work properly. Any help on how to update the software would be greatly appreciated!
