Go to your text messages and choose to delete threads or individual texts, usually by pressing and holding the thread from the contact screen that shows all of your conversations. To ensure that all of the messages are gone you can go into your stock message app and check your threads there to see if the conversation remains. If you are using the stock messaging app you're once and done.

To delete your call history open the dialer, slide to the right to show your call history, three dots in the upper right hand corner, or menu button, delete call history. This will not delete your history from your bill. If the snoop has access to the account they will still be able to see all of your calls. There is no way around that beyond taking account administration rights away from that person.
