Samsung Gear S without sim?

I have been looking at getting the Samsung Gear S. I carry my phone with me absolutely EVERYWHERE. I love the idea of having the Gear S as a watch that I can quickly check my notifications/texts on without having to scramble around in my handbag for my phone.

I was wondering what actually works with the Gear S only connected to the phone via bluetooth, without a SIM in the watch itself? Can I view my texts and text on the watch and it be sent through my phone? Can I use the internet on the watch while connected via bluetooth using my phone's mobile data? Will the watch notify me if my phone is ringing?
