reset used samsung 2 tablet

I am giving a niece my samsung 2 tablet. How do I clear it of my information and start over with hers?

If you're referring to a Factory or Hard or Master Reset, the link here will show you the two ways of doing it on your device. Your personal data will be wiped, although you can back it up first if you like....you don't have to download it afterwards but perhaps you'll need to on another device.

If your niece has a Google account, say, adding that account to the tablet and signing in to it will download her personal data into the tablet.
