Lesson first:
Bluetooth specifies a way to get data from point A to point B. It doesn't specify the type of data or the format it has to be in - that's up to the devices transferring data. IOW, your phone's Bluetooth firmware and your car's Bluetooth firmware have to agree on what data they'll exchange and in what form they'll exchange it.
You can draw your own conclusions, but mine, for a situation like this, are that the car audio needs an update to the S7's format - and hopefully, than won't conflict with the S5's format. (Bluetooth changes all the time - getting one pair to work can be a job. Getting one audio system to work with 2 different generation phones can be impossible.)
