Not sure I really understand your question, but if you want to change the color tone or the brightness you can do that on your phone's Display Settings. If you want to modify the color intensity beyond that, I think you'd need to root your phone and install an app that can modify signal levels to the display driver (but I would truly advise against that as it can damage the driver or the screen itself).

Welcome to Android Central! Do you mean that the screen is in black and white? If so, check your power-saving mode, since that might change the screen to black and white to save energy.
