A few Pixel XL issues..

Just to add to the discussion regarding the keyboard. I love the Google keyboard, but how on earth does the Google keyboard on iOS end up being better than on Google's smartphone?
A number of Google's apps have been better on iPhone. It is both a richer platform and dev environment.
 
My SwiftKey is acting like a jerk too.

It is working fine on mine. I did see some people mention an issue with SwiftKey and other keyboards (lag and such) -- they cleared the cache/data on the app and it seemed to fix it for them.
 
I now believe it's the slight difference in the screen size.. My finger hits the RETURN button instead of the enter button way too often, prompting it to predict an emoji, or open the emoji list.. it's frustrating, but I'm still trying to determine if it's user error or the app :) The built-in keyboard is a struggle too.
 
In the past, inconsistent swipe gestures were caused by bad touch sectors on the screen.

An easy way to test for this:

Enable Developer Options (go to About Phone in Settings, then at the bottom, keep tapping on Build Number and it will enable it)
Go back to Settings and open up Developer options
About halfway down, under Input, turn on the toggle for Pointer location

Now if you put your finger on the screen, you can trace it all over and it will show the path. If it jumps around, or stutters and skips a section, you likely have an issue with the digitizer. If not... you likely don't. Note that if you're using a screen protector and do have issues, you might want to try it without the screen protector as that could be a complicating factor (though it shouldn't if it's well-made).

(and don't forget to turn off that toggle unless you love the 'pointer trails' for your mouse on your pc!)

Do any of these issues warrant a device exchange?

A non-fully-functional digitizer, absolutely.
Games, most likely if you're having issues they simply haven't been optimized for 7.1, and that may take some time given how new it is and how few (essentially, 2) models are currently running it.
Outlook email, if it floods in emails... does it do that both when you're connected to wifi as well as only to the cell network? If only with one, could be an issue of connectivity. Also, you mentioned Outlook - 3rd party apps, again, may need some TLC to make them run smoothly on 7.1.
Voice detection? tough to say.
 
The only issue that I'm having is that Hangouts isn't syncing until you actively open a conversation, then everything syncs.

Clear data on hangouts (not cache). My Note 7 and Pixel did this as well until I cleared data.. Now they're up to date even upon just opening :).

For me:-

Photo/Video backup just freezes. Doesn't matter if I change from home to office Wifi. Only thing that rectifies it is a restart and then it works as expected.

Camera crashes fairly frequently. I get a purple stripe on my screen before it blacks out a freezes. Can't take any photos but I can use the rest of the phone. Restart rectifies.

There seems to be a clash with my android wear/google now. If I have my settings for google assistant to recongnise my voice from any screen (not to unlock my phone when locked) google assistant will open on my phone and now via my watch when I say 'ok google'.

As someone else has mentioned, sometimes my phone doesn't seem to recognise when I say 'ok google'

FWIW, if that were happening to me, I'd be contacting Google seeking a replacement as that sounds like a defect. Since it's still so new to market, you shouldn't really have to worry about it being replaced with a refurbished phone as, well, I doubt there are any yet.
 
Let us remember that this is Android and a new OS pretty much, I have already seen a number of my apps that do not behave...CNN being one, due diligence and hopefully they will be patched or we can find work arounds.

Not fundamentally, but enough of a changed OS, being a major release, that it's a reasonable expectation that apps that worked on prior iterations might need to be adapted, like programs often do when a successive version of Windows is installed. Google's apps should be properly vetted before OS release, but 3rd party developers may range widely in terms of how much effort they put in to taking advantage of the developer preview to ensure compatibility at launch, and, as usual, many address it after the fact leaving users in limbo for a period.
 
Maybe some of those misbehaving apps are not updated to Android "N" yet? Sometimes an app that does get updated still misbehaves until the dev gets it sorted out. Just a thought, could be a factor.

Changed enough very correct. Remember as well that the initial Nougat was 7.0 and there have been a good bit of underlying api changes and such with the upgrade to 7.1 now. Give it some time I have a few apps that don't work well CNN and my xfinity connect app crashes a good bit. That's ok to me and acceptable at this point.
 
If you tap on the top of the device do you hear any rattle?

Just an fyi, I used the Chat Support to ask whether the rattle was normal. After some troubleshooting the tech asked me to remove the sim tray and reinsert it. Popped it out, reinserted and it decreased the rattle by 90%. I guess the SIM tray wasn't properly seated.

I think it's a software issue. Tried going through the support chat but part of the trouble shooting they suggested was a third party camera app and if rather stay as I am, rebooting when it occurs every few days (there has been an update since my last crash so hopefully it's been rectified)
 
Install a third party camera app to use in place of the stock one!

Same issue again tonight so update hasn't fixed it
