Turkey stuffed peppers w/Spanish rice. The cheese was a Monterey Jack/Colby Jack blend.

As an aside, I hate fluorescent light.

One of my fav ..growing up always had those special days when the pork was included for evening meals or parties ..
I smoke a pork butt twice a month, a brisket once a month and ribs a couple of times a month.
 
That’s a beautiful thing ...and I know you have the right technique down pat ...slow and steady wins the race ...
I have two great accessories that help. A SnS SlownSear which you can see in the back of the grill, and a Thermoworks "Smoke" with two probes and remote unit which allows me to monitor the meat and grill air temperature even from inside the house. Low, slow, and lazy.
