Available apps on Nexus vs S7 Edge

At the end of my contract with verizon, im jumping ship to Google fi. Ive done extensive reaserch on the web, and found no real negatives. Especially, where I live and work in areas that all 3 fi carriers are strong. My question now is about nexus phones. Im a longtime galaxy owner with an S7 edge. I know I'll be diwngrading a bit. My question is, will I be able to use all my apps that I git ftom google play store? Exactly what is straight android?
 
You should have no problems installing your apps that are in your Google Play Store account. It would be highly unlikely for an app there to be compatible with the S7 edge and incompatible with the Nexus 5X (unless it's an app designed specifically for the S7 edge, like one that takes advantage of the edge screen).

What do you mean when you ask what straight Android is? Android on a Nexus is as close to "vanilla" Android as you'll find without installing a custom ROM. No bloatware (unless you consider Google apps bloat). It comes with the Google Now Launcher, which is a bit fancier than the basic launcher that older Nexuses used to come with--but you can always install an alternate launcher like Nova to make it as simple or fancy as you want.
 
If it's from the Google Play Store, you should be fine. Even a lot of the Samsung apps (like S Health) are available for non-Samsung devices.
