I've tried configuring the settings in the stock calendar app but every time I restart my phone they revert back to the default.
I was on a chat with Samsung support and they had my flush the cache by going into the Android system recovery menu but that didn't work so they told me to do a hard reset.
Before doing this I thought I would put it out here first to see if anyone else is having this problem or knows how to resolve it.
4/19/13 UPDATE: Problem solved. In addition to the stock calendar app I had Google calendar app installed and there must have been a conflict. Once I removed the Google calendar all the settings have held.
