Can I get back Sense UI?

It was supposed to take you to the bootloader. Hm..it really seems like fastboot is enabled and the Rom you are using doesn't give you the option to disable it..

Can you go to settings>about phone and see if it tells you what Rom you are running in any of the options?

Also, try holding down the volume button. Does it give you a prompt to shut down the phone?

There's no Rom version, just a Model number : HTC_One , Android version : 4.2.1 and Kernel Version : 3.4.5 - ser3@ser3System....

And other stuff like Build Number and baseband etc.

Should I try that?
 
If you get a prompt to power off when holding the power button, select it. After selecting shut down, hold down the volume down.

There's an app called SuperSu in the apps menu. Fyi. (In case that helps)

This is not the recovery I saw when I did the factory reset...

But this is the screen that showed when I turned off the phone and held the Volume Down key when it turned off

I would say reboot the phone and check system language..but...I'm not sure which option is reboot! And the bootloader is normally always a white screen...

I do not think it is the bootloader. Perhaps try plugging it in to the computer again and try the adb reboot bootloader command.
