Can I get back Sense UI?

If unplugging the phone and plugging it back it and issuing the command does not work, I'm going to go out on a limb here and say that the first option on a recovery is generally reboot system. If you trust it, I would select it.

Did that... now it just says GPS followed by some chineese symbols and it's counting seconds or something

Spoke to a friend who speaks chinese, he listed this when I showed him a screen shot :

1) factory setting
2) automatic test
3) manual test
4) single test
5) test report
6) (Very technical..let me think)
7) delete e MMC
8)version information
9)restart

I think it's safe to say that this is NOT the bootloader, nor is it the recovery lol

Just "Power Of" and "Airplane Mode"

When I hold down the power button and choose restart, I'm given a few extra options. I know it's because of my Rom, but I also know a few other roms include this.

Unfortunately I don't have any of that The only thing that makes me sure this is some sort of rom is because of

1) The HTC logo works as a "menu" button
2) There's no HTC Sense
3) When I tried doing a factory reset, the phone went STRAIGHT into Recovery Mode.
