Can the deleted chat still in backup if I deleted it before 3am?

My ex is having access in every account of mine and I needed privacy. I was shocked before when he told me that I was texting someone (a friend of mine) he is far from me that time. I was in UK and he was in Asia. I'm quiet scared that he is still doing this to me. What should I do? I always deleted the messages everyday before 3am is that safe?
