Change default speech to text?

The speech text doesn't always work well and when i leave a network and go outside it sometimes does not work. is there a way i can change the default engine? do when i hit a microphone in the verizon messenging app it will use an engine where its all local.
i have galaxy s6 edge plus, android 6.0.1

I use Google text to speech instead of Samsung text to speech on my Note 5 and it works fine without Wi-Fi or data turned on.

I should have added I am using the Google one and not the Samsung one.
