data setting for non-AT&T Android device

Should I worry about changing the setting in the Access Point Names? Or just put the AT&T SIM card in and go?

Welcome to Android Central! If the device is unlocked and supports AT&T's network bands, then just insert the SIM. The phone should auto-detect the network and connect. If you have problems, go to Settings>Network & Internet>Mobile Network>Network Operators​ and make sure AT&T is selected.
 
The only thing I'd recommend is at least updating the IMEI on your account to your Pixel. At least for me I find that I get better service if the IMEI is up to date on my account.
 
Does AT&T recognize the IMEI or the Pixel 2 as an LTE-capable device? There have been issues in the past with unlocked phones and AT&T "not having" the IMEI's in its database as LTE phones, and defaulting those phones to 3G service.
 
While on the line, ask them to provision your IMEI for HD calling. Hopefully you're talking to someone with a clue. You might need an updated sim.
 
Yeah it's hit or miss if the IMEI even needs to be updated but I just do it just in case and it has help my service on other unlocked devices. I'm running the Beta 8.1 and HD Voice is active on my device without me needing to call AT&T to set it up. WiFi calling is all we need now.
 
If you have LTE already provisioned on your account, then swapping the SIM is perfectly fine. It's generally an issue for those coming to AT&T for the first time and trying to use the IMEI of an unlocked device.

My Pixel 2 XL arrives sometime next week - I'll wait until 8.1 is released to update the IMEI.
