Define Default Apps does not show some categories (music,email,video)

I switched to a new (Samsung) smartphone with Android 12 and wanted to setup (new) default Apps for a couple of categories.

When I go to Apps--->Choose default Apps

then I find only some but not all "usual" categories. I miss e.g.

- for email
- for music
- for videos

The corresponding Apps are already installed and run fine

So why are these categories not available?
They should be listed at least with assigned stock built-in Apps

Those categories aren't standard in Android, at least not any more: https://www.makeuseof.com/tag/remove-change-set-default-apps-android/

You can always set specific apps to open certain links in the Opening Links menu, but the system should prompt you anyway if you encounter a new link that can potentially be opened by a certain kind of app (like a music app).
