Is there a way to either hide/disable/delete the default apps that come with the phone? Sorry if someone asked this already, but I couldnt find any threads with the answer <.<

You can delete some of them thru the cmd.exe from your computer, but deleting the wrong ones will brick your device. I will try to locate the instructions of how to do this.

Personally I just rename the .apk fiiles in \system\apps to filename.apk.old, and then the icons don't show up in the drawer.

the only thing I have in my system folder is a drm folder and that's even with hidden folders enabled

and then i found it using astro but it says insufficient permisionss

To do it with the stock Eris setup I'm positive it requires root. Once your rooted you can do as Cory states above, just rename the file *.old or delete the file if you dont ever plan on using it (backup the file just in case though).

For Non-rooted phones (stock phones)
You can get AdvancedLauncher (Android Donut specific) from the market, which lets you replace the current home screens and use it to "hide" apps. but this doesn't remove them from the phone, just hides them.
