Might be for a store demo for the ones that are being sold in a brick and mortar store.

It's in the System UI Tuner section also. I'm not sure what it is, I'm afraid to enable it...

According to one web site (yes, I googled it):

You can also choose to enable “Demo mode.” In demo mode, the status bar is cleaned up and shows no notifications, a full battery, full Wi-Fi and cellular signal strength, and the time is always set to 6:00. This is just a visual trick — disable demo mode and all your notifications will still be there.

Another site adds this:

Demo mode is perfect for developers who want to take screenshots or videos for the Play Store, and also for gadget bloggers who want readers to actually pay attention to said screenshots.
