did Google have to copy Apple's "Made by Apple" slogan? "Made by Google" just reminds me of "Made by Apple" which is on Apple's website all the time.

Not really, they want to say it is build by them, and not Lg for example

What alternative did they have? Google phone? Made by google is simple english and not copyrighted

LG? Aren't the new Pixel phones made by HTC?

And it appears on hundreds of products - Made by <manufacturer's name>. It's not an Apple thing (no, Apple did NOT invent speech), it's a thing done in not only a lot of products labeled in English, but a lot of products labeled in any human language. Even animals "brand" things with their own scents.

This is a purposeful move by Google to maneuver into a more Apple-esque space; a focus on simplicity, usability, minimalism...

It seems a little counter-culture to the Android ethos that's organically evolved as a community of those prizing personal customization over ease of use - and it's an odd space for Google to put themselves in (now squarely between Apple and Samsung).

It's not exactly a unique catchphrase, and it's not like Google's marketing team intentionally went to Apple when considering how to sell this thing and decided they'd steal something so simple.
