Educated Guess on Off-Contract Pricing?

It doesn't affect your upgrade date at all. You don't sign anything regarding your contract. It's as if you bought a used one from eBay and wanted to swap it in. Doesn't affect it at all. I'm on my 4th different phone since July when I blew my contract on a Droid 3 and I still have the same upgrade date of March *COUGH* 2013 *COUGH*.

Do you still get to retain your unlimited data (assuming you're grandfathered already)?

Yep. As long as you don't make any other changes to your account. I just swapped an iPhone for a Bionic and get to keep my unlimited and I even get unlimited 4G - which is basically why I did it now...to grandfather myself in it just in case they try to take it away later as 4G begins to become more of the standard for phones.
