Yep, I was pleasantly surprised when I saw DS on the box as this of course means dual sim.
HOWEVER.... I also found something called EID and that happens to be esim identifier so I have just enabled it with an esim plan I bought for a tenner and giving me a UK phone number.

I didn't know the Samsung Note 20 Ultra has an esim option as well as the Hybrid Dual Sim options ?

Is this definitely right ?

Yes definitely, as you can see in the screenshot I'm using sim1 for my Vodafone line, sim slot 2 is empty and I have the SD card there.
Then the eSim is separate below the physical ones.

Sweet.

Unfortunately Vodafone UK does not support the esim for phones but only for Apple Watches so I'll have a nosey around so I can experiment.

We don't have eSim here either, I got it as a PayAsYouGo thing from eSim.net for a tenner., it's a UK mobile number.

Not 100% sure what the advantage is to most people.
But it's a built in sim. No physical card required. I would look at it as a negative for someone like myself who swaps devices quite often as well as sim providers. Nothing easier than swapping out the card.

That said - as my man above has done, it's easy to try another provider. Especially if travelling - eg, you can buy t mobile esims on amazon UK for use in the states. No sim required, just a code on arrival.
What is an esim exactly?

With the eSim you just scan a barcode instead of swapping out the card, simple dimple
