I want to do my wife iPad when we aren't home.
The thing I want to know is how long does it take to root and is it possible to unroot? also is it fairly easy. I'm a little scared I would screw it up

To answer your questions, rooting shouldn't take more than 30 minutes once you familiarize yourself with the process. Unrooting is indeed possible. The first question to you is, are you unlocked? If not, you'll need to do this before the rooting begins. The entire process is simple, and there are tons of guides that outline it step by step. Your phone is safe also, because S-On still provides safeguards to the more sensitive areas of the Rez.
If all you're after is a hotspot on the go, consider that you'll have to pretty much have your Rezound remain tethered to an outlet, because the power drain will be serious.
I would not worry about kernals much in the beginning. Are you going to jump right into ICS, or stick to Gingerbread for a while? I'm particular to the Sense4 roms myself, but if your not going to upgrade to ICS, I'd stick with Gingerbread roms until you upgrade to ICS firmware. You can run ICS Roms without upgrading, but you have to pay attention to each Devs instructions as there are additional steps.

Try OTARootkeeper from the market. That will keep root through OTA's...supposedly.
