I will be very biased in my response, as I owned (and loved) my white Honor 8 for about 14-ish months. My fiancé is now using it and he was tempted to stick with Honor as well for his next upgrade.
Honor is a very dependable brand. Its operating system, EMUI, is smooth and extremely customizable - if you love tweaking your software/homescreen/display experiences, then I would highly recommend this. You can download an app (called "EMUI Theme Editor," I believe) in order to further customize your Honor phone to your liking.
The Honor 10 has a big battery (3400 mAh!) so if you are a power user, that is a big win in your corner. It's dual-SIM and has a front-mounted fingerprint scanner. My Honor 8 had a rear-mounted fingerprint scanner but a front-mounted one would mean you could check your phone from a flat surface without moving it.
Aside from the overall functionality of the phone, I loved the aesthetic and glass look/feel of my Honor 8. The Honor 10 is no different. It's also made of glass and comes in really nice colours. Plus you'll spend less on it than you would on an S8.

This isn't to say that the S8 isn't a good phone! It is actually the first phone from Samsung that I'd consider buying. It's the same size as the Honor 10 as far as objective display height goes (5.8"); it has a 3000 mAh battery; but only has 4 GB of RAM (Honor 10 has 8). One definite plus over the Honor 10 is that it is ip68 dust and water resistant.
Plus, I know you said camera wasn't an important feature, but any phone from Samsung is bound to give you an enjoyable and superior camera experience than most other flagships. (I own a Pixel 2 and say that.)
