As far as making it water resistant, yes that would be a challenge but guess what, that's what new features used to be.
Challenges designed to be useful and enticing features for users to get excited over. It was called putting effort into making a new phone. Every year has been mostly refinements, except this year where they finally realized high megapixel cannot make up for lens and went back to 10x.

Removable battery and longevity have no correlation other than history. You said it yourself, the tech has come a long way. Being pull tab glued in vs placed has zero impact on how long it will last.
It's about obsolescence once degradation takes place and convenience of quickswap.
My batteries have mostly been fine since I charge from 20% to 80% but that's a PITA. I want to be able to use my battery without thinking about it so my phone doesn't become e-Waste in 2-3 years.
I haven't found a single bluetooth headphone that sounds good. That coupled with Bluetooth using nore battery is no bueno. The jack being there would hurt no one. What else is no bueno is having to carry the stupid adapter around. Further all adapters are not equal. They have their own DAC that affects sound.
Feeling the need to invalidate one another has turned the internet into what it is (thanks reddit) for fake update points and eventually elsewhere.
