How can I edit or delete contact info from the cloud on Galaxy S8

1) When I edit a contact, it often seems to add information rather than modify it, leaving old incorrect information in the contact.
2) Some contact info shows as being from the cloud. What does this mean. And why can it not be modified?

It means it's at Google Contacts. Take a look there and see what needs changing. (Unless you back up to Samsung - then it's there - but you should back contacts up to Google.)
