From Application Manager in settings you can disable the app, which will stop it from doing pretty much anything at all.
Also: when in the App Drawer there is an option for a menu on the top left of the screen (three dots vertically). In that menu select "Hide Apps" and select S Health. Wont get rid of the app, but will stop it from doing anything or be seen
