For the life of me I can't find the setting to change the notification sound in the Google Messages app. Am I going crazy?

Long press the messages icon and click that little icon in the top right corner and then go to notifications. You'll be able to pick the sounds from there

Found another way. Open messages, settings, notifications, incoming messages. It seems odd that you tap on that to open it's settings menu, but it works.

For anyone trying to do this in 2024, the above no longer works in Android 14.
Here is the new way to do it.
  1. Open the system settings screen.
  2. Click on Notifications.
  3. Click on Advanced Settings.
  4. Scroll to the bottom of that page and enable "Manage notification categories for each app
  5. Go back to your home screen and run the Message App
  6. Click on your profile picture and select "Messages Settings
  7. Click on Notifications
  8. Click on "Behaviour, sound & more"
  9. At the bottom of that page click on "Notification categories"
  10. Make sure Incoming messages is enabled then click on it to change it settings.
  11. Click on the Sound option to select the Notification sound.
  12. Back all the way out to the home screen and you are done.
