How to make ex-Verizon tablets update OS.

I have a former Verizon Samsung 10.1 and Galaxy Tab II 7.7 tablets. I bought them through Verizon and have since discontinued the data connections. They are owned outright. However I cannot get the devices to update the OS. The "Check Software Update" source remains Verizon.

Are there any ways of breaking that logjam and let the device update?

Not the way you want. You'll have to learn to use Odin or Kies (or both) for updating, then find an update file for each (try SamMobile Firmwares). (The search bar needs the model number, like i707 - and you'll have to create a free account to download.) An orange K to the right of the download means use Kies to update. Without it, use Odin to flash the files.
