How to return to pre-broken mode

Hello and thank you to everyone for helping me get my phone working again! Took longer than I hoped, but I am becoming a pro at Odin and restores now! This community is grand!:D

I am back to Eclair 2.1 and I have my old system backed up on my SD card. What ought I do recover my old data?

Install CWM probably first.
Once I have that, will I need to install the DK28 modem since I have the DK18 version from the SPH-D700-DI18-8Gb-REL.tar restore used.
Once I have the DK28 installed I should be able to boot into CWM and flash my restore.

Now, I've used Bonsai before in my old data. Will I need to install Bonsai 1.1.2 since that was the most recent ROM I had installed when I did the original backup?
 
That would be your best bet. Make sure you have the DK28 modem, flash Bonzai v1.1.2, and then restore your data.

My phone is alive, just installed clockwork, now I'm fixin to root it.

If I follow the steps in rooting-ultimate-guide I see this will install the DK28 modem and also partition to Ext4.

I have yet to get my data restored to my phone. If I follow this rooting process, will I be able to restore anything?

I guess instead of rambling, I could ask the more broad question.
Once I have my phone rooted and data backed up with an RFS ROM and I install a ext4 ROM , will I ever be able to restore my apps and data from the recovery tool in CWM?

Update: Seems my phone is downloading the apps I had previously paid for, and I can log into my appbrain account online and download the free apps I had installed. I just am coming to terms that I won't have my message log or settings. I can live with that I suppose. But my angry birds progress! Ohh, i have to start all over?!

The rooting-ultimate-guide doesn't install Froyo or a modem - it just roots whatever setup you curently have.

And if you're going from a Froyo ROM to another Froyo ROM and you have that backup to Google setting checked, when you boot up your new ROM the Android Setup Wizard will actually restore your settings as well as re-download your Market apps. Pretty cool huh?

I try not to use Clockwork restore data too often because it has the potential to cause problems - I save it for emergencies. To backup things like Angry Birds play data, try downloading "MyBackup Root" from the Market. It's 100% free and can backup apps/their data, sms, call log, etc.
