I've got a Samsung S24 using Vivaldi browser and when I hit certain sites (like Reddit) I get asked if I want to open the app instead. I would like to stop that behavior. I don't want to open an app and I don't want it to ask me. Anyone have any suggestions on how to disable that? TIA!

That would likely be the website's doing. Nothing to do with your choice of browser.
For reasons I'm not sure of. They want you to use their app, probably ad control for monitary purposes.

Use desktop site.

Welcome to AC!
On your s24 go to settings>apps>at the top default apps>open in link tap scroll down to your web browser tap >toggle off open supported links off

OP isn't talking about the "open in app" popup in Android, he was talking about the ones which are shown by the website (as seen in the screenshot). In this case, the solution is to switch to desktop site.

I'm sure it's about control and data collection, which is one reason I don't want to use the apps. We're sharing WAY too much information with these companies.

Agreed. The best example, if we're talking about android, are google apps. Google not only invades your privacy by collecting your personal information non-stop, their apps also slow down your device and drain battery (by way too much) in the process of spying on you. But not only google, the same is true for any proprietary/non-free software.
Also, did you try to enable Desktop Site, like I said? This should get rid of the "open in app" dialog on most websites (as they don't have "apps" for desktop OSes), but the text and content will be smaller in size.
