I've been using MyBackup Pro for my android devises for some time . It cost a few dollars but works really well for my needs .

Just to note, I have tried smart switch but it doesn't support 3rd party app data transfer. I'm not sure with Samsung kies

I second that to Kies. It works very well. Download Kies 3 from Samsung. Hook up your other phone and do a backup. Plug in your S5 and to a restore. Simple. I went from SII to S5 and that was a big upgrade and it still worked great.

What if I don't want to transfer everything, just contacts sms and settings for accounts? And then reinstall my apps as needed, I have a bunch of stuff on my S4, I never use and don't necessarily want to transfer and then delete to keep the system cleaner. Would it be best to use helium and backup only what I want, or use kiss to backup only the data I want?

Can I selective choose what to restore from the backup or is it a one shot deal?

With my experience with helium you can selectively choose which ones you restore.

It backs up stuff you want backed up too.

With Kies you can pick and choose what you want also. It won't back up apps though. Just contacts, calendar entries, messages, pictures, videos, email and other misc data.
