Insufficient storage after lollipop 5.1 upgrade

I am from India and I recently updated my Moto E 1st gen ( 2014 ) from 4.4.4 to 5.1 official update . I uninstalled some apps and installed 5.1 with 563 mb free in internal storage(i.e 563 mb was free before update ) . Now 5.1 is working fine but internal storage is just 20mb free . Apps is 2.02 GB .

So i reset my phone with data reset . I have total 2.21 GB and 763 MB apps . How is the apps taking so much space now ?
I just checked that when the phone was released in May'14 it came with 2.21 total space and 2.05GB available i.e some 200Mb of apps .How come the app size has increased so dramatically ?

After Lollipop the runtime changed from Dalvik to ART. Apps are pre-compiled when installed or right after the system update. This makes that they load and run faster but they need a bit more space. That's normal and nothing to worry about, you just need to clear some space in your phone to avoid storage problems.

So motorola has basically made the phone useless as apart from predefined apps I have installed only 5 more apps ( no games ) and only 250 MB left now .

I just have one more question , if I decide to root my phone will I be able to move the apps like chrome, youtube , google now etc. completely to SD card using LINK2SD ?
at the same time will I be able to uninstall some apps like google movies or book which I don't use at all ?
If yes can you please provide me the link for rooting also ( my phone is already out of warranty period )
 
I've read your numbers again and there's something strange about them. My wife's got a Moto G 1st gen with 8Gb. After Lollipop she's got about 5Gb for her to use. Her apps are taking 3Gb of that free space. That's a big difference with what you've got, specially after a factory reset. Try to check what's taking all that space through your settings or downloading a file explorer.

I don't know much about rooting so I can't help you with that.

As I said I don't know much about rooting, I'll try to get some help. Being a Motorola device it shouldn't be difficult to root.

I am also facing this same problem with Moto E and same question clicked my mind too. So can anyone please answer this. And is it safe to root ?
