Is it possible to use and unlocked device with verizon work overseas on a different carrier

Long story short. I purchased a Sa!sung Galaxy S7, first day I had it I dropped it and broke the sceen. Went through Samsung for insurance, they don't have the phone in stock so they are sending me a check instead for the cost of a new phone. I am on Verizon network but I will be traveling to Europe next month and didn't know if I could just purchase an unlocked GS7 and be able to use it here on Verizon network and also in Europe by simply purchasing a sim there from whatever network works in the country I am in. I am trying to avoid having the buy a new phone while over there.
