Is there a way to permanently uninstall updates from default apps?

I wanted to save storage space by uninstalling updates of the default apps (such as the google music, news, etc. apps that I never use which frees up over 100MB of space) from the applications settings, and my phone says they've been reset to their factory version, but a while later, I'd see a notification at the top with the google play store icon saying the said apps have been updated, and when I go to look at my app storage space, it has gone back to how it was before I've uninstalled the updates. Is there a way to permanently uninstall updates without rooting the phone?

Welcome to Android Central! It sounds like you have App Auto-update turned on in Google Play Store. Open the Play Store app, swipe in from the left and tap Settings, then uncheck Auto-update Apps.
