Is there a way to solve this issue and if so, how?

I have had the OnePlus 5T for the last 2 years and only recently, since 3 days ago my phone has been opening up apps that aren't open, switching to another app that is opened and Bringing up google all on its own.

The phone has to be looked at by a repair shop - there's no way to diagnose a problem like that without actually having the phone.

Welcome to Android Central! Do you have a screen protector? If so, try taking it off. If that doesn't help, does the problem also happen in Safe Mode? https://www.hardreset.info/devices/oneplus/oneplus-5t/safe-mode/

While not always the case, your problems are the same as those of a hacked phone.

That may be in the realm of possibility, but I'd say the chances favor something interfering with the touchscreen (or a malfunctioning touchscreen). We see a lot of posts here from people who are really afraid their phones have been hacked just because it's doing something slightly odd (that can be explained by many other more common possibilities) -- in my opinion, it's a lot of unnecessary fretting over something very unlikely.
