Is there a way to undo the last S8+ update??

I now have a Rainbow screen that I am unable to get rid of!!

There's no way to roll back without being rooted. Have you tried a restore?

Edit: Apparently I was wrong and you can flash the old firmware through Odin.

To elaborate on what Zendroid1 said, Samsung sometimes prevents a roll back of the OS through the bootloader, rooted or not.

I was able to flash the older unlocked firmware version on my T-Mobile device. I think if you do it through odin you could very easily reload an older firmware. It will of course wipe the phone and prompt for updates that you will have to ignore.
