It should be 7.0. According to this article, 7.1 is still being tested.

Is Samsung testing Nougat 7.1 for Galaxy S8?

Yeah, that's what it sounds like. I believe that all the carriers and places like Best Buy and Costco have some sort of deal with Samsung so they are not allowed to released them as early as they used to.

Ordered it from Samsung directly. Do not like the placement on the fingerprint sensor- hard to reach and the small size doesn't make it any more convenient. Maybe a few more days will make me get used to it. Face unlock makes things a bit easier but isn't as consisten and depends on lighting conditions.

I played around with the S8/S8+ at Best Buy today and I absolutely hate the placement of the FPS. I decided not to order one and I'm looking to see what the Note 8 brings.

Nope. Didn't get a screen protector.

Ah ok. Have you tried Bixby in it's limited capacity yet?

Yes. When I got the phone Bixby was very limited but last night it got updated and now there are settings for voice. That being said, you still can't enable voice settings and I get a message "Couldn't Connect to Network" when Ilaunch Bixby now. News feed and schedules etc. are getting updated so I'm assuming Bixby Servers for voice are not getting connected to.

I'm in Dubai and bought it directly from Samsung. Everyone who preordered from Samsung got them this week.

It's running 7.0. No update yet. Only Bixby got updated but not via software update.
