Welcome to Android Central! This has been done already (like Samsung's Galaxy Beam phone: https://en.wikipedia.org/wiki/Samsung_Galaxy_Beam_i8530). I believe there are also some phones from Chinese manufacturers like Doogee that have a projector. The two main issues with projectors are (1) they use a ton of power, and therefore sap the battery quickly, and (2) there's just not much demand for it from the general consumer population.
