with my Note20 samsung note, i can write a phone number using the S-pen, then when i hoover over it, it recognizes it's a number and gives me the ability to call it.
now the S24U does not recognize a number or email (ie. abc@gamil.com).
This was possible with the Note 4 but I don't have that option with the Note 7 s pen. When I use my s pen to jot down a number there is no option to save it to the phone. Thanks for the info in advance.

Now I found this AI summery saying it was possible in a similar way as you described but I cannot get it to work for me as described. Yes, the S Pen can be used to write a phone number and call it using the Samsung Notes app:
Open the Samsung Notes app and tap Add new note
Tap the Handwriting mode icon to start writing
Write a phone number with the S Pen
Hover the S Pen over the handwritten phone number to make a call
I was able to get it to work for me in the following way.
1. Open Samsung Notes, and create a new note
2. Slide the bottom option row over to the left, revealing a pencil with a T, S-Pen to Text
3. Save the note or close editing.
The number turns into actual printed text, and it sees the 10 digits as a phone number when tapped it sends it to the dialer. Maybe not the same as it recognizing the handwritten text but it doesn't seem to be anymore steps as long as you don't mind printed text vs handwritten text.
I wasn't able to find a video specific to this feature but there are several that say "every tip and trick", "everything you need to know about the S-Pen", so on and so forth which may include this feature if it still exists in the latest One UI. This video says Every Tip...

yes, i had watched a similar video in the past when you hover over phone number and email, it does what it says in the video atr 5:45 mark. however, i think samsung had removed this nice feature because i can not do it anymore.
