I've noticed that if I go to system->app on my rooted device, I can find all the stock apps, and by deleting the apk and odex file the app will be uninstalled. I've done this to all the bloatware and phone is working fine. Even works on sammy widgets too. The tw launcher is also there, if I delete it, will my phone use stock ui, or will it mess it up?

What kind of launcher would I need to get stock android ui? I'm sure stock ui has some sort of launcher correct?

Yes, the vanilla Android launcher should just be called "Launcher" and may already be on your phone. You can download an app like Home Switcher from the Market to see what launchers you have and switch between them.

You can also get the stock Android Gingerbread launcher from the Market, it's free.
